防霉保鲜膜对大米贮藏保鲜效果的影响 被引量:6

摘要 以新研制的大米防霉保鲜膜与其它3种包装材料为试材,调查研究贮藏4个月的小站稻新米的真菌污染状况和贮藏3年后的小站稻陈米醛类挥发物质的积累情况,以确定新研制的大米防霉保鲜膜的防霉效果。试验结果表明,新研制的大米防霉保鲜膜防霉效果与其他3种包装材料比较米样真菌污染最少,仅为23%;同时对天津小站稻陈米醛类挥发性物质的代谢积累有显著的调控作用,醛类总含量为12.132mg/kg,明显低于其它3种对照包装材料的醛类含量。 Taking new rice mildewproof and freshness film and other three packaging imental material, the situation of fungal contamination in 4 months storage xiaozhan- materials as the experfresh rice and accumulation of aldehydes volatile substances in 3 years storage xiaozhanstale rice were studied. The anti-mold effect of new rice mildewproof and freshness film was determined. The result shows that, compared with other 3 kinds of packaging, anti-mold effect of new rice mildewproof and freshness film is better. Its rate of fungal contamination was 23% which is significantly lower than other control treatment, meanwhile, the new rice mildewproof and freshness film evidently control metabolizing accumulation of volatile aldehyde materials in the xiaozhanstale rice. Its total content of aldehydes were 12.132 mg/kg, obrionsly lower than the other control treatment materials.
