摘要
该文概述中国饮食文化的深厚传统;从求变的角度阐述潮菜创新的途径;从美味、美感和营养养生的角度阐述潮菜创新的原则;进而阐述慎重推出创新品种和注重不同菜系及本菜系地域性横向交流是潮菜创新须注重的问题以及创新品种的品评与保留积累等问题。
This article expounds the profound cultural tradition of Chinese dishes; then explains the innovative ways of the Chaozhou Dishes from the angle of change-seeking; also explains the innovative principle of the Chaozhou Dishes from the angles of delicacy, beauty and health; and then points out that the innovation of new variety and giving attention to horizontal exchanges with other regional dishes, and maintaining and aceumulation of innovative variety of Chaozhou Dishes.
