黄颡鱼繁殖期主要组织器官中氨基酸和脂肪酸的组成 被引量:10

Amino Acid and Fatty Acid Composition in Pelteobagrus fiulvidraco during Reproducing Period

摘要 采用生物化学方法,对黄颡鱼繁殖期的性腺、肝脏、肌肉中的氨基酸和脂肪酸进行了测定。结果表明:氨基酸组成中,雄性亲鱼肌肉中氨基酸总量最高,为42.73 g/100g;其次是精巢,为36.40 g/100g;肝脏中含量最低,为24.01 g/100g。含量较高的氨基酸有Glu,Asp,Lys,Leu,Arg,Ala,Gly,Phe。Glu在所有氨基酸中含量最高,Lys在必需氨基酸中含量最高。雌性亲鱼肌肉中氨基酸总量最高,为41.98 g/100g;其次是卵巢,为25.71 g/100g;肝脏中含量最低,为18.74 g/100g。脂肪酸:雌雄亲鱼均为MUFA所占比例最高,其次是SFA,PUFA比例最小。脂肪酸比例较高的雄鱼与雌鱼相似,分别是C18:1n-9(油酸),C16:0(软脂酸),C18:2n-6(亚油酸),C16:1n-7(棕榈酸),C18:0(硬脂酸)。研究揭示了黄颡鱼繁殖期性腺、肝脏、肌肉在物质组成上的特点。 Amino acid and fatty acid composition in the gonad, liver and muscle of Pelteobagrus fiulvidraco during reproducing stage have been examined by biochemical methods. The results show that amino acid content in muscle is the highest in males, which is 42. 73 g/100g. And the second is in spermary, content of which is 36.40 g/100g. Amino acid content in liver is the lowest, which is 24.01 g/100g. Relatively high content of Glu, Asp, Lys, Leu, Arg, Ala, Gly and Phe are in these tissue and organs. Content of Glu is the highest among amino acids and Lys is the highest among essential amino acid. In females, amino acid content in muscle is the highest, which is 41.98 g/100g. And the second is in ovary, content of which is 25.71 g/100g. Amino acid content in liver is the lowest, which is 18. 74 g/100g. As to fatty acids, the ratio in male is similar to female. The highest is MUFA, the second is SFA,and PUFA is the last. The predominant fatty acids, in terms of relative proportion, are C18: 1n-9, C16: 0, C18: 2n-6, C16:1n-7 and C18: 0. The present study indicates composition characteristics of amino acid and fatty acid in Pelteobagrus fiulvidraco during reproducing period.
