乐平猪和萍乡猪胴体品质及肉质的研究 被引量:3

摘要 通过对地方猪种萍乡猪和乐平猪及作对照的丹麦长白猪胴体品质、后腿肌肉发育、肌肉理化及组织学特性的研究表明:两个地方品种产肉力均较低.乐平猪则更易肥、瘦肉率低;后腿肌肉占半胴肌肉比例,3品种接近,但部分肌肉块占半胴及后腿肌肉的比例有显著的品种间差异.肉质以乐平猪最好,萍乡猪次之,长白猪最差.因乐平猪表现为大理石纹好.pH_2和肌内脂含量高及失水率低;肌肉的微观及超微结构,除线粒体面积两个地方猪小于白猪外,3品种均无显著差异.另外通过相关分析表明,产肉力与肉质有一定的负相关. Denmark Landrance Swine,Local Pingxiang and Lepin Swine were studiedon carcass quality traits,hindlimb muscle development states and physical,chemical and histological properties of muscles.Results indicated that:theLean contents of the two local breeds were lower than that of Landrance Swine,and Lepin Swine was fatter and had lower lean content than Pingxiang Swine.The ratios of hindlimb muscles to half carcass were almost same,but thereare remarkable differences among the ratios of part of muscles to hindlimb orhalf carcass.Leping Swine meat had the best marble veins,highest pH_2 valueand intramuscular fat and lowest loss water content among the three breeds,its meat quality was the best and that of Pingxiang Swine was better thanthat Landrance Swine.In microstructures and ultrastructures of muscles,there were no apparent differences among the three breeds except that thelongitudinal mitochondria areas of the two local breeds were smaller than thatof Landrance,correlation analyses indicated that the lean yield was negativelycorrelated with the meat quality.
