放养条件下宣城麻黄鸡的胴体、肉品质特性及血清生化指标的研究

Carcass Characteristics、Meat Quality and Serum Biochemical Index of Xuancheng Spotted-brown Chicks under Free Raising

通过测定20只宣城麻黄鸡的胴体性状、肌肉品质和血清生化指标,研究在放养条件下饲养的宣城麻黄鸡生长状况,试验结果表明:宣城麻黄鸡154日龄的平均体重为1.3505kg,屠宰率、半净膛率、全净膛率、胸肌率、腿肌率、腹脂率、肝重率、心重率、腺肌胃率分别为90.86%、81.46%、67.33%、18.40%、23.14%、5.13%、2.70%、0.75%、3.52%;宣城麻黄鸡宰后24 h肌肉pH值为5.83,肉色L值为49.11、a值为1.36、b值为9.78,蒸煮损失、水分含量、硬度、弹性、粘聚性、黏性、咀嚼性、肌纤维直径、肌内脂肪含量、肌苷酸、羟脯氨酸和胸肌MDA含量分别为:20.10%、68.98%、1714.72 g、0.76 g、0.70 g、1 202.19 g、913.46 g、48.09μm、2.57%2、.3223 mg/g、415.3692μg/g和0.1788 nmol/mg;血清中SOD、XOD、AKP、ALT/GPT、AST/GOT、BUN的活性和MDA含量分别为138.8953 U/ml、2.9155 U/L、31.4216king/100 mL、0.5449 U/mL、0.4299 U/mL、0.6748 mmol/L和5.7303 nmol/mL。

20 Xuancheng spotted--brown chicks at 154 days were slaughtered to study the characteristics of carcass, meat quality and serum biochemical parameters under free raising. The results showed： the average weight was 1. 3505kg, dressing percentage, percentage of half eviscerate yield, percentage of eviscerate yield, percentage of breast muscle weight, percentage of leg muscle weight, percentage of abdominal fat weight, percentage of liver weight, percentage of heart weight, percentage of glandular stomach were 90.86%, 81.46%, 67.33%, 18.40%, 23.14%, 5.13%, 2.70%, 0.75%, 3.52% respectively. The pH postmortem of Xuancheng spotted--brown chicks breast muscles was 5.83. The L-values, a--values and b--values of breast muscle were 49.11, 1.36 and 9.78 respectively. The cooking loss, water content, hardness, springiness, cohesiveness, gumminess, chewiness, fiber diameter, intramuscular fat, inosinic, acid, hydroxyprolin and MDA of breast muscle were 20. 10%, 68.98%, 1714. 72 g, 0.76 g, 0. 70 g, 1202.19 g, 913.46 g, 48.09 μm, 2.57%, 2. 3223 mg/g, 415. 3692 μg/g and 0. 1788 nmol/mg respectively.
