摘要
目的调查水发食品中甲醛含量情况,为食品卫生安全监督执法工作提供科学依据。方法按食品不同种类和来源随机采集样品,蒸馏后乙酰丙酮分光光度法测定。结果巴南区水发食品中甲醛合格率为65.4%,靠近主城区的城镇合格率高于其他小城镇,相差最高达33%。水发植物类合格率最高,为96.6%,动物性非水发制品合格率高于动物性水发制品25%~70%,其中发鱿鱼的合格率最低,为20.4%。小餐馆合格率低于大餐馆和集市20%。结论本地区水发食品中甲醛较严重,有关部门应进一步加强执法监督。
Objective To investigate formaldehyde content of waterishlogged food, so as to provide scientific basis in food security governing Method Samples were collected according to food variety and oringin. The formaldehyde was detected by acctycacetone spectrophotometry. Results It was 65.4% of waterishlogged food in this district. It was higher in townships near downtown than that in other small townships, and the difference reached 33%. It was the highest(96. 6% ) in waterishlogged floristic food. In animality food, it was 25% -70% higher of non-waterishlogged than that of waterishlogged. It was the lowest(20. 4% ) of sleevefish. It was 20% lower in smaUtype restaurant than that of rummery and bazaar. Conclusion In this area,waterishlogged food is in critical condition of formaldehyde pollution. The surveillance should strictly be enhanced by relative authorities.
