摘要
选用新鲜蕨菜作原料,辅以茉莉花全粉、蔗糖、柠檬酸与麦芽糊精,开发出一种新型保健饮料。研究结果表明,蕨菜饮料的最佳配方为:蕨菜粉65%、蔗糖3%、茉莉花6%、柠檬酸0.5%、麦芽糊精28.5%;蕨菜饮料的最佳干燥条件为进风温度为200℃,喷雾压力为1.0 kg/cm3,喷出物粘度(水与蕨菜质量比)为1:1.0。
The test which developed a new health drink was made use of fresh bracken for raw materials, combined with jasmine powder, sugar, citric acid and maltodextrin. The results showed that the best formula bracken beverages as follows: 65% bracken powder, 3% sugar , 6% Jasmine, 0.5% citric acid, 28.5% maltodextrin, the best drying conditions of bracken drink was the inlet temperature to 200℃, spray pressure was 1.0kg/cm^3, and eructation viscosity (water and bracken mass ratio) was 1:1.0.
