摘要
鲜切蔬菜是一种新兴食品工业产品。如何对鲜切蔬菜进行保鲜成为食品科技工作者的重要研究课题。介绍国内外鲜切蔬菜保鲜技术,综述鲜切蔬菜保鲜技术的研究进展,以期为食品科技工作者的研究提供参考。
Fresh-cut vegetable is a sort of new food product. How to preserve fresh-cut vegetables will be an important studying task for the food expert. Present preservation technology of fresh-cut vegetables and the current status of study progress for the food expert is introduced. It can also provide reference for food experts.
