平菇菌丝体在谷物上发酵条件的研究

摘要 研究了平菇9400在小麦和玉米混合培养料上的固态发酵条件,通过单因素实验和正交实验优化了发酵条件。结果表明:接种量、发酵温度和发酵时间对菌质营养成分有较显著影响。优化后发酵条件为接种量10%,发酵温度27℃,发酵时间14d,此时多糖达到3·45%,还原糖5·57%,蛋白质17·14%,游离氨基酸89·5%,均优于其他处理。 The conditions of Pleurotus ostreatus 9400 solid-state fermentation using wheat and corn as substrate was studied, and the fermentation technique was optimized by single factor and orthogonal test.The results showed that the inoculation size, culture temperature, time had significant effect on the nutrition of component.The optimum fermentations were 10% inoculation size,27℃ fermentation temperature,14d fermentation time.Then the content of polysaccharide was 3.45%, reducing sugar was 5.57%, protein was 17.14% and free amino acid was 89.5%.
