摘要
山东是农业大省,果蔬产量据全国首位,但是新鲜果蔬在采后贮藏和运输过程中的损失是惊人的。拮抗菌制剂是一种安全、无毒、有效的生物保鲜剂,应用前景广阔。本文综述了拮抗菌的种类、保鲜机理和在果蔬保鲜中的研究进展,探讨了拮抗菌生物保鲜的问题和对策。
Shandong is a large agricultural province, having the highest yields of fruits and vegetables all over the country.While the losses of fresh fruits and vegetables after postharvest are very serious.Antagonist preparation is a kind of safe, nontoxic and effective biopreservation preparation, having wide application prospect.The article reviewed the range, preservation mechanism and research progress of antagonist, discussed the problems and countermeasures of antagonist in the preservation.
