摘要
利用酶的各种特性可以很好地保藏食品,达到延长食品货架期的目的。本文主要介绍了多种酶在食品贮藏中的应用,同时也对酶技术在食品保藏中的限制做了介绍。
The characters of enzymes can be used to preserve foods and prolong the shelf life of foods.This article introduced the application of many enzymes in food preservation,meanwhile the astrictions of enzyme technology which apply in food preservation were also introduced.
