摘要
对来源于黑曲霉的β-D-呋喃果糖苷酶的酶学特性进行了研究。结果表明,β-D-呋喃果糖苷酶的最适pH值为5.0,最适温度为50℃。在40℃~60℃、pH值5.0~7.0其具有较好的稳定性。金属离子对β-呋喃果糖苷酶活性有影响。Mn2+和Ca2+能明显增强酶活,而Cu2+和Ag+能抑制酶活。
The properties of β-fructofurnosidase from AspergiUus niger were studied. The results showed that the maximum enzyme activity occurred at pH 5.0 and the optimal temperature of β- fructofurnosidase was about 50℃. The enzyme was stable under 40 - 60℃ in the range of pH 5.0 - 7.0. Effect of various metal ions on the activity of fructofuranosidase was followed : Mn^2+ 〉 Ca^2+〉 Ba^2+ 〉 Mg^2+ 〉 Fe^2+ 〉 Cu^2+〉 Ag^+ . The Mn^2+ and Ca^2+ strongly stimulated the activity of β -fructofuranosidase, while Cu^2+ and Ag^+ inhibited it.
