渤海银鲳成熟卵巢生化成分分析

Analysis on the bio-chemical composition of mature ovary tissue of silver pomfret Pampus argenteus caught in Bohai Sea

采用现代生化分析方法,研究了渤海银鲳卵巢组织的生化成分。结果表明：卵巢水分平均含量为68.83%,蛋白质平均含量15.45%,脂肪平均含量12.37%,灰分平均含量1.21%,糖类（碳水化合物）平均含量1.82%;卵巢组织的17种氨基酸中以谷氨酸含量最高,天冬氨酸次之,赖氨酸居于第三位;卵巢脂质中的主要脂肪酸排列顺序如下：C18∶1（n9＆7）〉C16∶0〉C22∶6n3〉C16∶1n7〉C20∶5n3,饱和脂肪酸（SFA）占脂肪酸总量的18.95%-25.28%,单烯酸（MUFA）占24.67%-31.87%,多不饱和脂肪酸（PUFA）占19.72%-24.26%,EPA和DHA之和占16.27%-20.08%。

This paper deals with the investigation on the bio-chemical compositions of the mature ovary tissue of silver pomfret Pampus argenteus caught in Bohai Sea by means of modem hio-chemical analytical methods. The results indicated that the average content in mature ovary tissue of silver pomfret, water occupied 68.83% , protein occupied 15.4% , lipid occupied 12.3% , ash occupied 1.21% and carbohydrate occupied 1.82%. There were 17 kinds of amino-acids in mature ovary tissue of silver pomfret, among them the average content of glutamic acid was the highest, aspastic acid was the second, lysine acid was the third. The main fatty acids could he arranged as follows：C18：1 （n9＆7） 〉 C16：0 〉 C22：6n3 〉 C16：ln7 〉 C20：5n3. In the total content of the fatty acids, the saturated fatty acid （SFA） occupied 18.95%-25.28%, mono-unsaturated acid （MUFA） occupied 24.67% - 31.87% , polyunsaturated acid （PUFA） occupied 19.72% - 21.26% and EPA together with DHA occupied 16.27%-20.08%.
