分子学方法鉴定肉制品种属来源的研究进展 被引量:18

摘要 肉制品中生物种属的鉴定在打击食品掺假伪造、审核食品标签、保障消费者知情权、维护消费者健康以及保护稀有物种等方面有重要作用。本文综述了目前用于食品中肉制品鉴定的各种分子生物学方法和各自的优缺点、目的基因的选择、实际应用中需要注意的问题以及分子学方法在肉制品鉴定中的发展方向。
