摘要
用含有50%纳他霉素的霉克(NatamaxTM)对广式的豆沙、莲蓉和咸鸭蛋黄莲蓉月姘进行了试验,模拟的试验条件为相当于中国南、中、北部地区盛夏的自然条件(25℃、RH80%;30℃、RH85%;35℃、RH90%);同时采用丙酸钙、山梨酸钾、对羟苯甲酸乙酯、对羟苯甲酸丙酯等作为对照试验。结果,霉克(400~600mg/kg)对广式月饼有良好的防霉效果。
?Astudy of thec effect with NatamaxTM(contain 50% of natamyci ) for three ninds mooncake of Guangdong type, as sweetened bean paste, lotus xeed paste, and lotus seed paste with talted duck egg are discussed. calcium propionate,potassium sorbate, ethylparaben, propylparaben ... was used as control. treated with the Natamax TM has a good anti mycotic effect (400- 600mg/hg).
