摘要
研究了共轭亚油酸β-谷甾醇酯与β-谷甾醇的脂溶性及抗氧化效果。脂溶性试验表明,共轭亚油酸β-谷甾醇酯在花生油中的溶解度为45.24%,而β-谷甾醇在花生油中的溶解度为1.13%。抗氧化性试验表明,在40、50和60℃条件下,共轭亚油酸β-谷甾醇酯添加量为0.10 mg/g时,对CLA、AA和DHA均具有最好的抗氧化效果。而在40、50℃条件下,β-谷甾醇添加量为0.30 mg/g时,对CLA的抗氧化效果较好,但没有共轭亚油酸β-谷甾醇酯的抗氧化效果明显;在60℃条件下,β-谷甾醇的抗氧化效果不明显。二者的抗氧化效果与其在油脂中的添加量之间没有明显的量效关系。
The fat solubility and antioxidation activity of conjugated linoleyl β- sitosterol and β- sitosterol were studled. Results: The fat solubility of conjugated linoleyl β- sitosterol is 45.24%, and that of β- sitosterol is 1.13%. Conjugated linoleyl β- sitosterol displays its best antioxidation activity to CLA, AA and DHA at 40℃, 50 ℃and 60℃ with a dose of 0.10 mg/g; while β - sitosterol displays rather good antioxidation activity to CLA at 40 ℃ and 50 ℃ with a dose of 0.30 mg/g, but not as good as conjugated linoleyl β- sitosterol, and is uneonspieuous at 60 ℃. There is no direct correlation between the addition dose of conjugated linoleyl β- sitosterol or β- sitosterol with their antioxidation activity.
