摘要
采用烘箱储藏法测定了山苍子油等3种香辛料精油的抗氧化活性。结果显示,山苍子精油具有较强的抗氧化活性,超过合成抗氧化剂丁基羟基茴香醚(BHA)的两倍,优于姜油和肉桂油。将提取过精油的山苍子树皮粉渣萃取物进行抗氧化性能测定,发现有一定的抗氧化作用,但抗氧化效果低于精油,其中氯仿组分的抗氧化活性约相当于BHA抗氧化作用的75%。在此基础上将山苍子精油及其微胶囊用于富脂饼干作抗氧化性能应用试验,结果表明精油微胶囊对热稳定性好,具有较强的抗氧化效果。
Antioxidative activity of three essential oils was tested by the oven storage method. Results showed that Litsea cubeba oil with stronger antioxidative activity was twice more effective than the synthetic antioxidant butyl hydroxy anisol (BHA), and more effective than Zingiber officinale oil and Cinnamomum cassia oil. Extractives of ground residues of Litsea cubeba bark after oil distillation all had antioxidative activity to a certain extent, but less than Litsea cubeba oil. Antioxidative activity of chloroform extractives was about 75% of BHA. Experiments conducted by adding Litsea cubeba oil and its microencapsules in biscuit show that microencapsule of Litsea cubeba oil had better heat stability and antioxidative activity.
