摘要
目的了解山东省干制水产品的质量状况。方法对山东省5个城市36个销售地点进行抽检。共抽检127份样品,其中干贝25份,海米30份,虾皮29份,干虾22份,鱼片21份。结果干制水产品的甲醛不合格率为21.3%,其中43份即食性干制水产品的菌落总数不合格率为55.8%。沿海城市的抽检状况要好于内陆城市,可能是因为干制水产品大多为散装,容易造成运输、销售环节的二次污染。结论生产监管部门应加大管理力度,杜绝使用非食品添加剂,同时加强市场监管。
Objective To know about the quality Status of dried seafood from markets in Shandong in 2008 Method 127 batches of 5 kinds of quality of dried seafood were randomly collected from 36 selling department, including 25 batches of Dried scallop, 30 batches of dried shrimps, 29 batches of dried small shrimps, 22 batches of dried shrimps, 21 batches of fish fillet. Results It was found that the unqualified rate of formaldehyde was 21.3%, and the unqualified rate of Total bacteria was 55.8%. It is showed that the quality of dried seafood in coastal cities was better than that of in inland cities. The possible causes are related to that moot dried seafood are unpacked foods and easy to get secondary pollution during transportation from processing plants to markets. Conclusion Administrative departments for production should strengthen management , completely eradicate to use non-food addictives in dried seafood.
