摘要
从原料、粉碎度、水分、工艺及环境等因素对大曲穿衣的影响进行了分析,总结了提高大曲"穿衣"的措施。结果表明,原料种类、粉碎度、水分及工艺等因素对大曲前期培菌过程有很大影响。
The factors including raw materials, grinding degree, moisture, processing techniques, and environment etc. influencing Daqu ＂clothing＂ were analyzed and the relative solutions to improve Daqu ＂clothing＂ were summed up. The results showed that raw materials species, grinding degree, moisture content, and processing techniques have great effects on Daqu in the prior bacteria culture stage.
