丙酸铬对育肥猪生产性能和胴体品质影响 被引量:10

摘要 将72头育肥猪按体重(平均为90 kg)和性别随机分成4组,每组3个重复,每重复6头。对照组饲喂基础日粮,试验组日粮在基础日粮基础上分别添加50,100,200μg/kg丙酸铬,以研究丙酸铬对育肥猪生产性能和肉质的影响。结果表明:100,200μg/kg丙酸铬组,猪日增重显著升高(P<0.05);料肉比显著降低(P<0.05);采食量差异不显著(P>0.05)。200μg/kg丙酸铬组,胴体重、眼肌面积、瘦肉率、后腿重显著增加(P<0.05);板油重、第十肋背膘厚、平均背膘厚、脂肪率、肌肉滴水损失显著降低(P<0.05);屠宰率、肉色、大理石纹评分、肌肉pH值、水分、肌间脂肪、剪切力差异均不显著(P>0.05)。结论:丙酸铬能够提高育肥猪生产性能、提高瘦肉率而降低脂肪率、提高猪肉保水性能。 The experiment was conducted to study the effect of Cr propionate on production performance and pork quality in finishing pigs. A total of 72 finishing piglets were randomly divided into four treatments according to the weight (90 kg) and sex, 3 repeats every treatment, 6 pigs every repeat. The pigs were fed basal diets supplemented with 0, 50,100,200 μg/kg Cr propionate, respectively. The results were as follows : ADG was significantly increased (P 〈 0.05 ), feed/gain ratio was decreased ( P 〈 0.05 ) and feed intake had no difference (P 〉0.05) in pigs fed 100 and 200μg/kg Cr propionate. Final BW,longissimus muscle area,lean percentage,weight of ham were significantly increased (P 〈 0.05 ) ;leaf fat, 10th -rib backfat, average backfat thickness,fat percentage and drip loss of a fresh chop were significantly decreased ( P 〈0.05 ) ;dressing percentage, subjective color score, marbling score, pH, moisture, intramuscular lipid and shear force of a fresh chop had no difference ( P 〉 0.05 ) in pigs fed with 200 ug/kg Cr. Conclusion: Chromium propionate may improve production performance and muscle percentage and water holding capacity as well.
