摘要
经研究发现在稀碱液中大豆低聚糖的浸出率明显提高,大豆的最大吸水率也有显著增加,并发现低聚糖的浸出率与大豆的最大吸水率之间有密切的关系。
In this paper we find that there is a highly increase for soybean oligosaccharides extraction in the diluted alkaline solution, and there is also a significant increase for soybean maximum water-absorption. There exists an intimate relationship between the oligosaccharaides ratio and the maximum water absorption.
