摘要 沙门氏菌(Salmonella)是一百多年前发现的一种病原体,是一种常见的重要人畜共患病原菌,它不仅可以引起胃肠炎,还会引起伤寒、败血症及肠外灶性感染等多种症候群。在世界各地的食物中毒中,沙门氏菌引起的中毒病例占首位或第二位,因而受到了人们强烈的关注,而沙门氏菌的检测方法正是人们关注的焦点之一。近年来,沙门氏菌检测技术有了很大的进展,由十分困难的传统分离培养法到免疫学检测方法发展成为今天的分子生物学检测技术。毫无疑问,检测方法的进展在便利沙门氏菌检测的同时,也将为更好地了解沙门氏菌奠定基础。综述了食源性沙门氏菌的概况以及其检测方法的研究进展。 Salmonella is a kind of crucial pathogen which was found hundred years ago, it' s a common zoonosis. It not noly cause gastroenteritis, but also cause various syndrome include typhoid, septicemia, intestinal external focus infection and so on. In food poisoning of all over the world , poisoning cases of Salmonella is take the first place or second place, so the it issubjected more attention. One of the focus is detection methods of Salmonella. Recent years, detection technique of Salmonella has great progress, from very difficult of separation culture to serological detection and then become to molecular biology detection technique. Without question, progress of detection methods are convenient to detection of Salmonella, meanwhile for people to lay a foundation to know well about Salmonella. This paper review survey of foodborne Salmonella and research progress of detection methods.
