摘要
对比分析乙醇浓度和反应时间对四种蛋清蛋白酶解物清除DPPH自由基活性的影响情况。试验研究结果表明:以50%乙醇为溶剂时蛋清蛋白酶解物的清除活性较高,反应时间对蛋清蛋白酶解物清除活性影响不大;由碱性蛋白酶2709在适当条件下酶解1 h的蛋清蛋白酶解物对DPPH具有较高的清除活性,其清除率为56.78%。
Effects of ethanol concentration and reaction time were compared on DPPH free radical scavenging activity of egg white protein hydrolysates in this paper. The experimental results showed that: the egg white protein hydrolysates with 50% ethanol as solvent showed a higher scavenging activity and the reaction time had little effect on the scavenging activity of them; The egg white protein hydrolysates by Alcalase 2709 in one hour under the optimum condition had a higher scavenging activity on DPPH up to 56.78%.
