环葡聚糖水解酶的应用研究

摘要 以环糊精和淀粉为原料,采用环葡聚糖水解酶为酶制剂,进行了高麦芽糖生产的研究。考察了环葡聚糖水解酶加入量及反应时间对高麦芽糖生成的影响。结果表明:在pH5.5,90℃下,以1%γ-环糊精为原料,环葡聚糖水解酶加入量为6U/mg(γ-环糊精),反应时间为3h;以5%淀粉为原料,环葡聚糖水解酶加入量为80U/mg淀粉,反应时间为10h,麦芽糖的产量均达到高麦芽糖生产要求。
