摘要
目的:为了掌握兰州市经销的面粉中过氧化苯甲酰的添加情况,为有关部门加强对面粉生产企业的监督管理提供依据。方法:采用优化后的气相色谱检测方法,对2008年兰州市经销的53份不同品牌的面粉中过氧化苯甲酰的添加情况进行了监测。结果:本次抽检面粉中BPO的检出范围为0~0.052 g/kg,34份面粉添加了过氧化苯甲酰,添加率为64.15%,但均未超标。其中特一粉和牛肉拉面粉的添加率较高,分别为78.57%和75.00%,而普通小麦粉的添加率低于平均水平。结论:兰州市市售面粉中过氧化本甲酰的添加情况符合国家相关要求,今后应近一步加强优化。
Objective:To investigate the situation of adding the benzoicperoxide (BPO) in flour in Lanzhou City to provide a basis for strengthening supervision and management to flour enterprises by the relevant departments. Methods: BPO in 53 different brands of flour in Lanzhou City were monitored by optimized GC methods in 2008. Results: BPO in these samples was detected in range of 0 - 0. 052 g/kg, of wich 34 samples were detected having added BPO, accounting for 64. 15% , but none exceed the criteria. Add rates in a special flour and beef noodle flour are higher, respectively 75.00% and 78.57% , while the level of ordinary flour was lower than the average. Conclusion:The situation of BPO in flour in Lanzhou City is good, expecting to strengthen further optimization.
