不同涂膜方法对水蜜桃冷藏效果的研究 被引量:4

摘要 以"银花露"水蜜桃为试材,用两种方法研究普鲁兰涂膜对冷藏"银花露"水蜜桃品质变化的影响。结果表明:"银花露"水蜜桃贮藏在2±0.5℃低温时,2.0%普鲁兰涂膜处理可以抑制呼吸强度、多酚氧化酶(PPO)活性及过氧化物酶(POD)活性,还原糖、可溶性固形物和丙二醛含量较低,总酸含量较高。 The effects of pullulan coating by two different methods on the quality of ' Yinhualu' peach fruits stored at 2±0.5℃ were studied. The results showed that 2% pullulan coating was effective to inhibit the increase of respiratory rate, polyphenol oxydases (PPO), peroxiclase (POD) activities, and to keep the content of reducing sugar,soluble solids,malondialdehyde at low level and titratable acid at high level.
