啤酒发酵过程中产生许多副产物,高级醇是代谢副产物的主要组分,是构成酒体的主要风味物质。本文讨论了高级醇的定义、形成过程以及代谢途径,详细分析了影响高级醇的因素及控制方法。
There are many by-products during the beer brew. while higher alcohols are the mostly main parts of byproducts. And higher ethanol has an important influence on the beer flavor. Definition, formation and metabolic pathway were discussed in this article. Factors influence the higher alcohols were analyzed in details and control methods were recommended.
