摘要 利用静态顶空固相微萃取-气相色谱/质谱联用(HS-SPME-GC/MS)分析方法对某浓香型白酒进行其高级醇和酯类分析,采用单因素分析方法对SPME条件进行优化,得出其优化条件为:萃取温度为40℃,萃取时间为30min,氯化钠加入量为0g。在优化条件下分析出74种物质,其中醇类物质13种,酯类物质42种,优于同类型文献报道值。定量方法采用面积归一法,分析方法快速简单,无干扰,本方法有助于白酒中香气成分的研究及建立假冒伪劣白酒的鉴别方法。 The higher alcohols and esters in Luzhou flavor liquor were analyzed by Headspace-Solid Phase Mieroextraction-Gas Chromatography/Mass Spectrometry (HS-SPME-GC/MS). The parameters of SPME were studied. Under the optimized parameters: the extraction temperature of 40℃, the extraction time of 30 min and sodium chloride of 0 g. 74 compounds were separated and identified, which was better than the results reported in other papers. These compounds included 13 alcohols, 42 esters. And their quantitative analysis was conducted by area normalization method. The results showed that the operating process of this method was easy and this method was expected to apply in the analysis of aroma components in liquor and the identification of fake liquor.
