摘要
介绍磷脂的主要生理功能,分别从分离方法、改性方法和稳定性3个方面归纳其研究进展情况,并对国内外的生产及应用现状进行综述,展望了其研究的发展趋势。
This paper introduced the lecithin' s main physiologic functions, and introduced the lecithin' s separation methods, reshaping methods and stability to sum up its research process. Meanwhile, reviewed the current situations of research and application at howe and abroad. It also prospected the lecithin ' s research development tendency.
