摘要 对氯化铵浓度、温度、接种量和装载量等四个因素对红曲黄色素固态发酵的影响进行了研究,确定了Monascus anka mutantMYM2固态发酵法生产黄色素的最佳培养条件为55%的初始含水量,三角瓶的装载量为18g籼米/250mL,添加0.2mmol/g的氯化铵,初始pH值为6.0,接种量为10%,30℃下培养10d。经过五次重复实验,得到黄色素的平均色价为665.78U/g,色调平均值为4.33,且样品中未检测到桔霉素。 Effects of ammonium chloride, temperature, inoculum size and filling quantity on the solid-state fermentation by Monascus anka mutatnt MYM2 were studied for yellow pigment production. The optimal fermentation conditions were shown as follows: initial water content 55%, filling quantity ofindica rice 18g/250mL in erlenmeyer flask, NH4C1 content 0.2mmol/g, initial pH 6.0, inoculum size 10%, temperature 30℃, and fermentation time 240h. After five repeated trials under those conditions, the average yield of yellow pigment was 665.78 U/g, the average color tone was 4.33, and no citrinin was detected in the product by HPLC.
