近年国内外对苦瓜研究发现其含有三萜类、植物甾醇、苷类、甾体类和肽类等多种降血糖活性成分。苦瓜的果汁、水、醇及醚等多种提取物具有降糖作用。多项研究表明苦瓜的上述成分可通过抑制葡萄糖在小肠黏膜的吸收、促进葡萄糖的利用、促进胰岛素的分泌和类胰岛素作用、保护胰岛β细胞并促进β细胞的增殖抑制其凋亡,以及免疫调节作用来降低血糖达到治疗糖尿病的目的。
