摘要
以面包制作为切入点,在高职焙烤课程中进行了综合性实验的尝试,学生对综合性实验教学效果满意率较高。介绍了本实验方法、实施步骤的设计,并对成绩测试和问卷调查进行了分析讨论。
This paper, taking the production of bread as the starting point, describes the attempt to conduct a comprehensive experiment of the baking course in higher vocational education. It introduces the design of experiment methods, implementation steps and also analyzes and discusses on the testing and survey results. The students show a high satisfactoring rate towards the teaching effect.
