小麦及小麦粉的微生物污染会导致发热霉变,产生真菌毒素,对小麦及小麦粉的品质和食用安全性产生重要影响,主要阐述了小麦及小麦粉中微生物污染与控制的研究进展,提出小麦及小麦粉微生物学的研究方向。
Microbe contamination in wheat and wheat flour could result in heating, mould and mycotoxin production, it might take great effect on the quality and edible safety of wheat and wheat flour. The paper discussed the research progress on microbe contamination and its control in them, and brought forward re- search direction on microbiology.
