γ射线辐照对大豆发芽和生物活性成分的影响 被引量:6

摘要 大豆异黄酮和大豆皂苷是大豆中重要的活性成分,具有较高的营养价值和保健功能。试验用不同剂量60Coγ-射线对晋大53、晋大70和晋大74种子进行处理,研究了γ射线对大豆种子的发芽率、活力指数、胚轴长以及对大豆发芽后子叶和胚轴中大豆异黄酮、皂苷含量的影响。结果表明,低剂量辐照后大豆的发芽率提高,胚轴生长速度加快;说明辐照能够提高大豆子叶和胚轴中大豆异黄酮含量,而对子叶和胚轴中的皂苷含量影响不明显。 Saponin and isoflavone, which have high nutritional value and health function, are important active ingredients in soybean seed. In this paper, germination, hypocotyl length and living index of soybean seeds of Jinda 53, Jinda 70, J inda 74 , which treated with different irradiation dosages of 60Coγ-ray, were studied. Meanwhile, the contents of saponin and isoflavone of hypocoty and cotyledon were determinated under different irradiation dosages in germinated soybean. The results showed that low irradiation dosages could improve seed germination rate, and accelerate the growth of hypocotyl length. Moreover, irradiation could promote the content of isoflavone in soybean hypocoty and cotyledon, but have no impact on the content of saponin.
