摘要
对不溶性壳聚糖在苹果汁脱色及澄清中的作用进行了研究,确定了不溶性壳聚糖脱色的最佳工艺条件:不溶性壳聚糖用量3.0 g/100 mL,温度35℃,pH值4.0;不溶性壳聚糖澄清的最佳工艺条件:不溶性壳聚糖用量2.5 g/100 mL,温度25℃,pH值4.0.对不溶性壳聚糖装柱吸附法的研究表明,该法可用于苹果汁的工业生产.
The application of insoluble chitosan in decolorization and clarification of apple juice was studied. The optimal conditions for decolorization of the insoluble chitosan are determined as follows : the amount of insoluble chitosan 3.0 g/100 mL, temperature 35 ℃ and pH 4.0. The optimal conditions for clarification of the insoluble chitosan are determined as follows: the amount of insoluble chitosan 2.5 g/100 mL, temperature 25 ℃ and pH 4.0. The study of absorption method with columns packed with insoluble chitosan shows that the method can be used for industrial production of apple juice.
