叙述了氨基酸在食品、饲料、医药、化妆品及表面活性剂等方面的用途。氨基酸是蛋白质的物质基础，是动物体合成蛋白质的原料来源，属食品、饲料的营养成分，在医学上具有防病治病的作用，也可作为营养型化妆品的有效成分及合成药物、表面活性剂。
This paper describes the progress and applications of amino acid in food additive,feed additive,medicine,cosmetics and surfactant.As the basic material of protein,amino acid serves as the material source for the compounding of protein within the bodies of human being and animals and thus as nutrient in food and feed.It plays a part in the prevetion and treatment of certain diseases in medicine and can be used as effective ingredient in nutritious cosmetics and as material for compounding surfactant,medicine and so on.
