摘要
紫薯是甘薯的一种,因为其含有丰富的花青素而呈现紫色,口感好,营养成分含量明显高于普通的甘薯,可作为保健食品。烹饪中能够为菜肴提供天然紫色的烹饪原料甚少,因此紫薯可以作为一种紫色原料用于中、西餐烹饪中。
Purple sweet potatoes, which are regarded as heahh food, appear purple because of the rich anthocyanidin. It tastes good and has more nutritional ingredients than ordinary potatoes as well. There are very few natural purple materials in cuisine, so purple sweet potatoes can be used as a purple material in both Chinese food and western food.
