摘要
采用盐酸降解法对水溶性银耳多糖进行降解,得到低分子水溶性银耳多糖。通过对DPPH自由基清除作用,表征低分子水溶性银耳多糖抗氧化活性的变化。当溶液黏度为16.5~9.8mPa·s时,低分子银耳多糖的平均相对分子质量在2~10kD范围内,抗氧化活性高于水溶性银耳多糖。而当平均相对分子质量>10kD或平均相对分子质量<2kD时,抗氧化活性较低。
The water-soluble polysaccharides extracted from Tremellafuciformis were degraded into low-molecular-weight polysaccharides using hydrochloric acid under different conditions. Then the antioxidant effects of the low-molecular-weight Tremellafuciformis polysaccharides (LTPs) obtained were investigated via the determination of DPPH radical scavenging activity in vitro. The results indicated that after the degradation in 0.1 mol/L hydrochloric acid solution at 50℃ for 0.5-3 h, the viscosity of the initial polysaccharides solution declined gradually from 17.8 mPa · s to 16.5 - 9.8 mPa · s, and the average molecular weights (MWs) of the LTPs were within the range of 2-10 kD and their antioxidant activity was higher than that of the undegraded water-soluble Tremellafuciformis polysaccharides. However, the LTPs with the average MW of higher than 10 kD or less than 2 kD, had weak antioxidant activity.
