摘要
红曲菌是具有我国传统特色的丝状真菌,被广泛用于食品、医药、化妆品等行业。从不同的应用领域出发,综述了红曲菌目前应用的研究进展,并展望了未来红曲菌的研究前景。
Monascus is a kind of filamentous fungus with Chinese characteristics and has been extensively used in food, medicine and cosmetics industry. The reseach progress in the use of Monascus in different fields at present was introduced in this paper. In addition, the use foreground of Monascus in the future was also predicted.
