摘要
[目的]了解揭阳市食用植物油的卫生情况,为卫生监督管理提供准确依据。[方法]食用植物油按照GB/T5009.37-2003食用植物油卫生标准方法进行检测,按照GB 2716-2005食用植物油卫生标准进行判定。[结果]检验298份食用植物油样本,合格292份,合格率97.99%。各年的合格率分别为97.26%、98.39%、96.92%、98.15%、100.00%,不同年份植物油合格率的差异无统计学意义(P>0.05)。砷、溶剂残留、黄曲霉毒素均合格;酸价和过氧化值分别超标5份和2份。不同单位植物油合格率的差异有统计学意义(P<0.01),不同种类植物油合格率的差异有统计学意义(P<0.01)。[结论]影响食用植物油卫生质量多为酸价和过氧化物值得关注,重点应加强食用植物油的卫生监测监督。
[Objective]To investigate hygienic status of edible vegetable oil in Jieyang city, provide scientific basis for health supervision and inspection. [Methods]Samples of edible vegetable oil were tested and evaluated based on " Examination method of standard edible vegetable oil" GB/T 5009,37-2003 and " Hygienic standard of Edible vegetable oil " GB 27 16 - 2005 respectively. [ Results ] Of the 2 9 8 oil samples tested, 2 9 2 of them were up to standard, accounting for 9 7. 9 9 %. The qualified rate was 97.26%, 98.39%, 96.92%, 98.15% and 100% respectively from 2004 to 2008. There was no difference of the qualified rate in different years ( P 〉0.05). The examination result of arsenic, solvent residues, aflatoxins can meet the standard. The content of acid value and peroxide value was over the standard in 5 and 2 samples respectively. There was a difference of the qualified rate of edible vegetable oil in different units ( P 〈0.01) ,the passing rate of different types of vegetable oils have statistically significant differences ( P 〈0. 01). [Conclusion] Acid value and peroxide can affect the hygienic quality of edible vegetable oil sanitation, supervision and inspection on the hygienic status of edible vegetable oil should be strengthened.
