小麦麸开发利用的研究

小麦麸具有抗衰老、抗癌、减肥等重要生理功能。由于小麦麸含有较多粗纤维，口感粗涩，主要用于动物饲料。小麦糊粉是去皮小麦麸，含有丰富的膳食纤维和较少的粗纤维，口感好，其生理功能又优于麦麸，是一种很有前途的保健食品。去小麦糊粉小麦麸仍可作为动物饲料使用。

The prevention effects of wheat bran on senescence,tumorigenesis and overwheight has been discussed.Since it is rich in crude fiber and tastes terrible,wheat bran is mainly used in animal diet.Aleurone,which is rich in dietary fiber and poor in crude fiber,is separated from wheat bran and is the wheat bran without pericarp.Since it tastes nice and has better physiological effects than wheat bran,aleurone will be a good source of dietary fiber. The wheat bran without aleurone is still a good animal diet.
