摘要
用无水乙醇作为苜蓿叶蛋白粉中叶绿素的提取剂对各工艺参数进行了正交试验。结果表明:叶蛋白粒度、液因质量比和浸提级数等因素对提取效果有显著影响;草腥味残留率可降至10%以下。
Studies on the technological parameters of extracting chlorophyll from alfalafa leaf protein by means of anhydrous alcohol indicated that the granule size of flour,ratio of liquid to solid and extracting stages had the remarkable effects on the extracting results,while remaining ratio of odour could be reduced to 10%.
