超市畜产品沙门氏菌污染状况调查及控制方法探讨

抽检大中型超市畜产品40份,沙门氏菌检测仅1份阳性,检出率2.50%。乳酸钠浓度为400μg/ml,壳聚糖浓度为800μg/ml,ε-聚赖氨酸浓度为60μg/ml,Nisin浓度为60μg/ml时,对沙门氏菌的抑制效果最好,可使基质中的沙门氏菌降低4个数量级。

The Salmonella enterica spot check results showed one example was positive in forty livestock products in supermarket, detective rate was 2.5%. The sterilization effect on S. enterica was best, S. enterica in the medium was reduced four orders of magnitude, when concentrations of the sodium lactate, chitosan, ε-poly-L-lysine, Nisin were 400μg/ml, 800μg/ml, 60μg/ml, 60μg/ml respectively.
