液芯包囊内保加利亚乳杆菌浓缩培养的研究

摘要 选用乳清粉作为基质培养基,经单因子试验确定了液芯包囊内保加利亚乳杆菌浓缩培养的最适碳源和氮源。在此基础上,通过正交试验得到了液芯包囊内保加利亚乳杆菌的增殖培养基配方:乳清粉60g,葡萄糖10g,玉米浆15g,K2HPO44g,酵母膏5g,番茄汁60mL,MgSO40.28g,MnSO4·H2O0.19g。在优化条件下,保加利亚乳杆菌其囊内细胞密度可达到9.96lg(cfu/g)。 Using whey as the culture medium, the effect of different carbon sources and nitrogen sources were discussed by single factor tests. By or- thogonal experiment, it was found that optimal medium for Lactobacillus bulgaricus proliferation consisted of 60 g whey power, 10 g glucose, 15 g corn-steep liquor, 4 g KzHPO4, 5 g yeast extract, 60 ml tomato juice, 0.28 g MgSO4 and 0.19 g MnSO4·H2O. Under the optimized conditions, the L. bulgaricus biomass in the l/quid-core capsules reached 9.96 lg (cfu/g).
