摘要
对荔枝种仁的营养成分进行了测定.结果表明,荔枝鲜种仁中各成分的含量(w)为:淀粉40.72%、粗纤维24.55%、蛋白质4.93%、镁0.28%、钙0.21%、磷0.11%.种仁脂肪中含量最高的是油酸和荔枝酸,分别为29%和28%;其次是亚油酸,为19%.这说明荔枝种仁是开发中老年保健食品的良好营养源.
In this paper the nutritvie composition in the seed kernel of Litchi chinesis is analyzed. The results show that fresh Litchi seed kernel contains starch (40.72%), crude fiber(24.55%), protein(4.93%), Mg(0.28%), Ca(0.21%) and P(0.11%). The largest composition in the seed kernel oil are oleic acid(29%) and Litchi acid (28%), next is linoleic acid (19%). It is suggested that litchi seed kernel may serve as a good source for making health_care food for the middle_aged and the old.
