摘要
葛缕子是一种常见的食用香料,在食品工业中得到了广泛的应用。文章综述了葛缕子的应用范围,葛缕子精油的提取方法和理化性质,以及化学成分等方面的研究进展。此外,对葛缕子在食品调味和保鲜贮藏方面的应用前景进行了展望。
Carum carvi L is a very popular spice and has been widely applied in food industry. In this paper, the application scope of Carum carvi L, extracting method of essential oil, chemical and physical properties, and research progress of chemical components are reviewed. In addition, the application foregrounds of Carum carvi L in seasoning and food preservation are also expected for the future.
