摘要
研究并优化了红心萝卜色素的提取条件。结果表明影响红心萝卜色素提取的因素依次是液固比、酸度、浸提时间、浸提温度。液固比5∶1,浸提时间2 h,浸提温度50℃,浸提剂酸度为pH 2是提取红心萝卜色素的最佳条件。
Extraction condition of red radish pigment was investigated in this paper. The result showed that the factors affecting the extraction of red radish pigment were the ratio of liquid to solid, pH, extraction time, extraction temperature, respectively. The optimum condition to extract red radish pigment was as follows., the ratio of liquid to solid was 5 : 1, extraction time was 2h, extraction temperature was 50 ℃, pH was 2.
