摘要
宴会菜品生产设计是为实现宴会菜单设计的菜品提供的技术支撑和可操作性保证。提示宴会菜品生产的特点,划分和确定宴会菜品生产过程及各阶段的基本内容,阐释宴会菜品生产工艺的设计要求、方法及宴会生产实施方案的编制,仍然是宴会设计研究的空白。
Banquet dish production design is to ensure technological support and operability for the realization of the dish products in the banquet menu. Research remains a blank in banquet dish producing characteristics, classification and definition of banquet dish producing procedure and content of various stages, interpretation of design requirement, methods as well as production practice planning of dish products.
