摘要
改革开放以后,"满汉全席"得以商品形式复出于餐饮市场。一旦为消费者享用,立即引起轰动效应,并迅速构成一道新闻风景,引起了较为广泛的社会影响。但是当今"满汉全席"的经营制作,已成冬葛夏裘,脱离了实际应用的轨道;其研究工作也因诸多原因,与"满汉全席"的实践行为存在隔膜。应当重视"满汉全席"遗产价值,同时改进其铺张糜费的负面传统,并在相关食俎文化研究过程中,突出其实践技能并注意其用语和文体的通俗化。
After the reform and opening, Ching and Han Royal Dynasty Feast reentered the dietetic market in the form of commodity, which has aroused the consumers'interest and the immediate social effect known to the mass media. The operation and production of Ching and Han Royal Dynasty Feast turn out to be impractica- ble, and the research work for some reasons meets obstacles in practice. The emphasis on its heritage value and renovation of the negative side of excessive extravagance and waste combined with the highlight of its prac- tical techniques and the popularized diction and style in cultural research are supposed to be done.
