摘要
研究了大豆分离蛋白水解的最佳预处理条件.研究了不同微生物蛋白酶对大豆分离蛋白的水解效果,并筛选出效果最好的Alcalase蛋白酶进行正交试验.结果表明最佳工艺条件是:温度60℃,pH=8,w(S)=9%,w(E)/w(S)=4%,时间120 min,水解度为0.279 6.
The best pretreatment conditions of hydrolysis on the soybean protein isolates are studied. Effects of four different proteinases on hydrolysis of soybean protein isolates are studied and Alcalase is as the most effective enzyme. Through Orthogonal experimental, the optimum hydrolysis are determined : 60 ℃ , pH = 8, substratum concentration 9 % ,proportion of Alcalase to substratum 4 %, hydrolysis time 120 min and the hydrolyzing degree 0. 279 6.
